Italian chocolate trifle

If you asked anyone who knows me, they would tell you I’m a bit of a chocoholic. So I have shown great restraint in only have having written one or two chocolate based recipes since beginning this column.
I was really pleased with my first attempt at making a chocolate trifle. It had to be very chocolatey but not too sweet. I also experimented with different types of meringue, even poaching some in vanilla milk similar to a dish called floating island. In the end I decided to keep it simple.

6 large egg yolks
250 grams amaretti biscuits
225 grams Plain Chocolate (70%)
Juice of one large orange
75 grams hazelnuts ground
60 grams castor sugar
250 ml Double cream
550 ml milk
2 Tablespoon corn flour
2 Tablespoons Brandy
1 Tablespoon Amaretto (Almond Liquor)
4 small meringue or shells or stars

1. Reserve 4 amarretti biscuits for the top of the trifle then soak the remaining biscuits in the Brandy, Amarretto and orange juice.
2. Make a few chocolate curls to decorate with then melt the remaining chocolate.
3. Whisk the egg yolks with 50 g of caster sugar for 3-4 minutes.
4. In a medium size bowl mix the corn flour with 50 ml of milk into a smooth paste.
5. In a non-stick saucepan bring to the boil the remaining milk, then pour onto the corn flour paste whisking briskly.
6. Whisk in the egg yolk mix then return to the heat in a non-stick saucepan and cook on a medium heat until thickened stirring constantly.
7. Place saucepan in a sink filled with 1-2 inches of cold water and continue to stir for 1-2 minutes and leave to cool.
8. In a cool bowl whisk up the double cream to a soft peak stage.
9. Stir in the melted chocolate into the now luke warm custard.

Assembly
in a decorative glass bowl spoon half of the cream then top with half of the soaked biscuits. Pour 1/2 of the chocolate custard. Sprinkle half the hazelnuts then repeat the layers, finishing with the custard. Decorate the top with the four reserved amarreti biscuits and four small meringue stars. Dust with cocoa powder and sprinkle the centre with the chocolate curls.

Any recipes for buffalo? Hubby's gonna buy some for my birthday (www.northwalesbuffalo.co.uk). Is it the same as beef?

Dear Lazybugg,

I've only used buffalo a couple times,but I did as you summized treat like beef.

It tends to be a little leaner so take that into account.

I'll be very interested to hear how you decide to cook it.
I haven't made any suggestions here because you did not mention the cut of meat you were buying?

i adore all trifles but not so keen on chocolate puds, yours does look very tempting though. got any tasty trifle recipes to put on my site?

I don't have any trifle recipes at hand, but you have sown the seed of an idea....so perhaps sometime in the near future I will revisit traditional sheery trifle and see if I can make it tempting.

Question....can u taste the alcohol in it? Cus i dont do alcohol...but the trifle does look very yummy.

Yes you could substitute 3 Tbsp of alcohol with 3 extra Tbsps of orange juice.

looks like a delicious pud, like jelly_beanz we don't do alcohol so thanks for the replacement tip, would that work for all/most puddings? i buy the good food mag and our daughter goes to the show with my sister, my problem is knowing what to replace stuff we don't eat with - our son doesn't eat potatoes because they set off his eczema, then we don't like peppers/chillies or mushrooms or alcohol, seems like most recipes have one or more of these ingredients, i keep meaning to write into good food but never manage to get round to it (i can sit here blogging for hours though, ;-)!! )

Dear Jools,

It’s hard to generalize because the orange juice may be too acidic in some recipes, so I’m afraid these things are often trial and error.

You might find taking a look at the allergy catering manual useful. There is a link in the right hand margin...just scroll down.

If your son cannot eat potatoes, besides pastas you might try things like Red rice, Gardener Merchant sells it in some supermarkets. Its a very tasty rice, nutty but does not take as long to cook as brown rice.
Also pulses like dried beans etc can make a very nutritious alternative to spuds.
I do have a question about your son’s diet…does he eat much processed foods?
Because I have found that allergy suffers can greatly reduce their food problems by cutting out as much convience foods as possible. In other words when you make for example Spaghetti Bolognaise use a plain tin of chopped tomatoes instead of a prepared jar of sauce….
