Kin Knives Update

kin Knives

Anyone who follows this blog will know I have mentioned Kin Knives before.
Having been a chef for over 30 years and used Henkel, Global, Wustof, Sabatier and the rest….I only buy Kin Knives now.

Don’t buy knives on sale, or knives that can cut a tin can open!….just buy one of these then you’ll know why when I’m infront of an audience I get evangelical about Kin.

The people at Kin have recently revamped their web site and I was very flattered that they asked me if I could contribute a recipe or two to the site.
Again though I would like to stress that Kin do not pay me to extol the virtues of their knives.
I do this because I believe that my professional opinion should be shared with the readers.

Hey..
Have you tried some Nepalese dishes? What'd You think of it? They're really something exotic. If you haven't tried 'em, I strongly recommend you to do so.

Congratulations on your collaboration with them! You always disserve something better. I haven’t used Kin knives before, but if you say they are the best, that must be it. I have to buy one to feel the difference between Global and Kin. The picture you have put here is impressive. A wood like blade… who would have thought it will turn to be the best?

You are quite correct in surmising that I haven't been able to update the site recently due to my appointment as Executive Chef at The Pear Tree in Smite, Worecestershire. I'm enjoying my new job very much and hope those that know my food will come and check out The Peartree soon.

You should be aware that Kin knives are not made by Kin, as Kin are simply a UK import company making a very large markup on these knives. The top 'Suminagashi' range is actually the Hattori HD range, which can be purchased for less than half the Kin price via the japanesechefsknife.com website, which ships them directly from Seki in Japan. I have just purchased three of those knives for less than £150 including shipping, the Kin price is £360! Kin knives, 'kin expensive.

Note also that, while Kin refer to this range as 'the best knives in the world', it's only the middle of the road range for Hattori, with the hand-made SD range coming in at a much higher price. Anyone who doubts the truth of the above is invited to compare the knife on the opening page of the Kin website with the equivalent Hattori HD knife - if you can read Japanese Kanji characters, note that the name Ichiro Hattori is engraved into the blade...

Nice knives indeed... I have tried those myself and I can't complain... Those "blades" are excellent. It is a pity though that Kin does not produce dishwasher parts.
