Goat's Cheese, Sweet Potato and Broccoli Quiche

If Quiche has gotten a bad name in recent years it's because of unimaginative or poorly written recipes. For instance how much egg mix a quiche recipe needs depends on not just the size of the quiche dish but the contents too. Whether you use cream & egg or a mixture which also contains milk depends on the richness and bulk of the ingredients. Often in life we are told that one size fits all when when all know that is not strictly true just cheaper for the recipe writer/ or manufacturer to tell you it is so. The combination of the tart goat?s cheese contrasts wonderfully with the sweet potato and broccoli.

400 grams short crust pastry
4 large eggs
300 ml whipping cream
200 ml whole milk
140 grams (2 small goats cheeses)
200 grams of peeled sweet potato
100 grams broccoli
30 grams of grated Parmesan cheese
20 grams butter
1 ten inch (25.5 cm ceramic dish)

1.Roll out the pastry thinly & evenly on a lightly floured surface, try to keep a circular shape. Try to roll it until it is about 5 mm in thickness.
2. Lightly dust the pastry with flour then roll it up with your rolling pin.
3. Carefully unroll the pastry onto the lightly buttered flan dish, then press down gently & trim off any excess. Rest the pastry for 1 hour in the fridge to lessen shrinkage.
4. Make a baking paper circle larger than the quiche dish and lay it inside the pastry case.
5. Weigh the baking paper down with uncooked rice or dried beans and place in the a preheated oven gas mark 6 (200 c) on the bottom shelf.
6. Cook for 15 minutes then remove from the oven. Carefully take out the paper circle and rice making sure not to leave any rice on the pastry.
7. Return the pastry to the oven and cook until the pastry is a very light straw colour, but not brown. Let the pastry case cool down.
8. Cut the broccoli into small florettes removing any excess stork then blanch in boiling water for 3 minutes. Cool quickly under cold running water, then drain.
9. Slice the peeled sweet potato into even pieces 5 mm thick and keep any trimmings.
10. In a non stick frying pan, on a medium heat, fry the sweet potato in butter until it is half cooked, then allow it to cool.
11. Mix the cream, eggs and milk together then pour through a fine strainer and season with salt & black pepper.
12. Sprinkle the Parmesan cheese into the pastry case then follow with any sweet potato trimmings, then the broccoli.
13. Arrange alternating slices of the goats cheese & sweet potato in a circular fashion.
14. Carefully pour the egg mix over the ingredients, trying not to disturb them.
15. Bake in the middle of a preheated oven 180 C gas mark 4 for 30-40 minutes until set.

Chef's Tip
I usually like to offer a homemade chutney with my quiche, but there are many good ready made chutney's these days particularly at farmers markets and farm shops. Alternatively you serve as I have done with sweet pickled chillis, which make a great contrast not just in taste but in texture.
